Texas Meatballs

  • 3 lbs ground Sausage (we like Jimmy Dean: 2 regular and 1 hot)
  • 2 eggs
  • 1.5 sleeve's of Ritz Crackers (test the texture and add more if needed)
  • Combine all ingredients and roll into 1–2 inch balls. Place in pans (you'll likely need 2), and brown in oven at 325 for 30–40 minutes.

Meanwhile in large pot, combine sauce ingredients:

  • 3 Tbs Red Wine Vinegar
  • 6 Tbs Brown Sugar
  • 3 Tbs Soy Sauce
  • 1.5 C Ketchup
Bring sauce to simmer and ADD Meatballs to large pot with sauce.  When adding the meatballs, use a slotted spoon to remove as much grease as possible.  Stir to coat the meatballs with sauce! Enjoy!!

As an appetizer course: include tooth picks and they will disappear.

As a dinner course: the meatballs can be served with rice, egg noodles, or on their own.
